What kind of cheese do they use at Moe's mexican resturant?

I don't know if you've ever been there, but all the nachos and stuff have a white, creamy cheese thats REALLY good. I would ask them myself, but this is quicker, I don't know when I'll be going there next... but I really want to know what kind of cheese that is!
